The Stress Test	Hard Boiled vs. The Raw Egg	Egg Drop Soup
Planning on having scrambled eggs? Stress test eggs by squeezing them lengthwise and crosswise. It is very hard to break the egg when you squeeze it in one of these two directions. Will lengthwise or crosswise be harder? Write down your prediction and why. Then experiment (keep a bowl handy!).	Give the egg in question a spin on its side. A hard boiled egg will zoom around while the raw egg will wobble. Explain why this happens.	Another way to use your "stressed" eggs. You will need: 2 cans chicken broth 4 eggs- raw 4 tbsp chopped green onion 2 tbsp chopped parsley Boil the chicken broth. Add onion and parsley. Beat the eggs in a bowl until foamy. Put the eggs in the boiling broth, one spoonful at a time. What happens to the eggs?
